    Lightly adapted from Love & Lemons, this recipe combines fresh produce with creamy mozzarella, healthy fats, and crunchy pecans for a meal that supports energy, recovery, and overall health.

    Finished with a homemade balsamic reduction, extra-virgin olive oil, and fresh herbs, it’s a simple way to enjoy more whole foods without spending hours in the kitchen.

    Ingredients

    • ¼ cup balsamic vinegar
    • 1 cup sliced strawberries
    • 1 cup mozzarella pearls (or diced fresh mozzarella)
    • 1 cup halved cherry tomatoes
    • 1 ripe avocado, peeled, pitted, and diced or thinly sliced
    • ⅓ cup torn basil and/or mint leaves
    • ⅓ cup toasted, coarsely chopped pecans
    • 2 tablespoons extra-virgin olive oil, plus more if desired
    • Sea salt and freshly ground black pepper
    • A few handfuls of tender lettuce (optional)

    Instructions

    1. Pour the balsamic vinegar into a small saucepan and bring it to a gentle simmer over medium heat. Reduce the heat to low and cook until the vinegar has reduced by about half and becomes syrupy, about 8–10 minutes. Remove from the heat and allow it to cool.
    2. In a large bowl, combine the strawberries, cherry tomatoes, mozzarella, avocado, pecans, and fresh herbs. Drizzle with the olive oil, season with sea salt and black pepper, and gently toss to combine. For a beautiful presentation, arrange the mixture over a bed of fresh lettuce if desired.
    3. Finish by drizzling the cooled balsamic reduction over the salad. Add an extra drizzle of olive oil if you’d like, then serve and enjoy.
