  1. SOBA NOODLES WITH TOFU, GREEN BEANS & PEANUTS

Healthy eating can be flavorful, satisfying, and simple enough to fit your everyday routine!

For active adults over 50, balanced meals that include protein, vegetables, and healthy fats can help support strength, energy, and overall well-being. This colorful soba noodle bowl combines crispy tofu, roasted vegetables, peanuts, and fresh mint with a refreshing lime-sesame dressing for a delicious plant-based meal.

It’s a great option when you want to enjoy more variety in your meals while supporting an active lifestyle. You can also customize it with the vegetables you have on hand.

    Ingredients

    • Salt
    • 1 (14- to 15-ounce) block firm or extra-firm tofu
    • 12 ounces trimmed green beans
    • 1 red bell pepper, sliced
    • 2 medium shallots, sliced ¼-inch thick
    • 8 tablespoons olive oil
    • Black pepper
    • 1 tablespoon cornstarch
    • 5 teaspoons toasted sesame oil, or more to taste
    • Zest and juice of 3 limes (about ⅓ cup juice)
    • 8 ounces dried soba noodles
    • 1 cup coarsely chopped roasted peanuts, salted or unsalted
    • 1 cup coarsely chopped mint leaves

    Directions

    1. Preheat the oven to 425°F. Bring a large pot of water to a boil with 1 tablespoon of salt. Set out two large sheet pans and position oven racks in the upper and lower thirds.
    2. Cut the tofu in half lengthwise, then into ½-inch-thick slabs crosswise. Cut each slice through the middle crosswise to make pieces about 2 × ½ × ½ inches. Pat dry thoroughly.
    3. Transfer the green beans, bell pepper, and shallots to one sheet pan. Toss with 2 tablespoons of olive oil, ½ teaspoon of salt, and ¼ teaspoon of pepper.
    4. In a medium bowl, mix 2 tablespoons of olive oil, cornstarch, 2 teaspoons of sesame oil, ½ teaspoon of salt, and ¼ teaspoon of black pepper. Add the tofu and gently toss to coat. Spread the tofu on the second sheet pan.
    5. Roast both pans for 20–25 minutes, without flipping, until the tofu and vegetables are browned.
    6. In a large bowl, combine the lime juice and zest, the remaining ¼ cup of olive oil, and 3 teaspoons (1 tablespoon) of sesame oil.
    7. Cook the soba noodles according to the package directions. Drain and rinse well under cool water to prevent them from becoming mushy. Shake dry and add to the dressing.
    8. Let the vegetables and tofu cool slightly. Add them to the bowl along with the peanuts and mint. Toss to combine, then season with additional lime juice, sesame oil, salt, and pepper to taste. Serve warm or at room temperature.

Make healthy eating part of your active lifestyle.
