Ingredients
Crunchy Ramen Croutons
- 2 tablespoons butter, melted
- 1 (4-ounce) package ramen noodles, seasoning packets removed
- 1 tablespoon sesame seeds (optional)
- ¼ teaspoon salt, or to taste
Salad
- ¼ cup Thai sweet chili sauce
- 2 tablespoons white vinegar
- 2 tablespoons mayonnaise
- 1 tablespoon avocado or other neutral oil
- 6 cups coleslaw mix
- ¼ cup sliced green onions
Shrimp
- 8 ounces peeled large shrimp, tails removed, thawed if frozen
- 1 teaspoon chili powder
- ½ teaspoon salt
- 1 tablespoon neutral oil
Instructions
1. Make the croutons:
Preheat oven to 400°F and line a baking sheet with parchment. Break the dry noodles into small pieces. Toss with melted butter, sesame seeds, and salt. Spread on the baking sheet and bake for 5–8 minutes until lightly golden. Set aside.
2. Make the salad:
Combine the sweet chili sauce, vinegar, mayonnaise, and oil in a large bowl. Add the coleslaw mix, half the green onions, and the toasted ramen pieces. Toss to combine.
3. Cook the shrimp:
Toss shrimp with chili powder and salt. Heat oil in a skillet over high heat. Add shrimp in a single layer and cook for about 2 minutes. Flip and cook another 1–2 minutes, until opaque throughout.
4. Serve:
Divide the salad into bowls and top with shrimp and remaining green onions.
Serves 2–3.
