Turkey Bacon Quiche

Eating For Life-By Bill Phillips is the book that we recommend to our clients who have an interest in reorganizing their nutrition. Living in South Texas, tortillas can be a big part of our diet and a diet culprit if we are not careful.
This recipe is so easy to make in pie dish, makes four servings and even if the rest of my family won’t eat any, I have plenty to take with me to work and reheat. Sometimes I have it for breakfast and it also makes a wonderful lunch or dinner with a small side of fruit and a salad.
Ingredients
6 strips lean turkey bacon
3(8-inch) whole wheat tortillas
3 whole eggs
8 egg whites of 1 c egg substitute
1/2 c skim milk
1/2 c low fat sour cream
3/4 c reduced fat cheddar cheese shredded
1 c broccoli florets frozen , fresh or thawed
Directions
- Pre heat oven to 350 f
- Cool turkey bacon according to its package directions set aside to cool.
- Lightly coat a 9-inch pie plate with cooking spray, overlap 2 tortillas and cut the third one in half to form a crust in large mixing bowl, beat eggs and whites with fork.
- Mix skim milk and sour cream into eggs.
- Chop cooled turkey bacon into bite size pieces.
- Add turkey bacon to egg mixture combine thoroughly.
- Pour eggs into tortilla lined pie plate.
- Bake for approximately 50 minutes until the filling is set.
- Allow to cool for 10 minutes before slicing portions.
