  1. Beef Supper Skillet​

     

    ​This Beef Skillet Supper is a very Fitness-Friendly meal, with tons of protein and wholesome, nutritious ingredients to power you through your day and fuel your results. It’s perfect for making on a weeknight when you don’t have a ton of time to spend in the kitchen, but you still want a dish that’s full of flavor.​

    This recipe calls for sweet potato rice, which is sweet potato that has been turned into noodles with a spiral slicer, and then pulsed in the food processor until small rice-like pieces form. It’s entirely possible to save time by chopping up your sweet potato rather than going through the process of turning it into rice if you’d prefer!

    What you need
    Serves 4

    • 1 pound lean ground beef
    • 1 teaspoon of sea salt
    • 1 teaspoon sweet paprika
    • 1 teaspoon garlic powder
    • 2 Cups Sweet Potato Rice or finely chopped, uncooked sweet potato
    • 2 cups kale, chopped
    • 1 cup liquid egg whites
    • *Optional* ¼ cup fresh mozzarella
    • *Optional* ¼ cup fresh cilantro
    • *Optional* ¼ cup guacamole

    Instructions

    1. Place a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a wooden spoon, until all of the pink is gone. Remove from heat.
    2. Mix the sea salt, paprika, and garlic powder into the beef. Return the heat to medium and add the sweet potato rice to the skillet. Cover and cook for 5 minutes.
    3. Add the chopped kale to the skillet, cover and cook for another 5 minutes.
    4. In another skillet over medium heat and scramble the egg whites until the curds are barely wet and starting to break apart.
    5. Mix the egg whites into the skillet and top with mozzarella and cilantro. Immediately serve with guacamole. Enjoy!

  2. Healthy Recipe, Cocoa-Spiced Beef Tenderloin

    Latin American flavors come alive in this festive beef dish with pineapple salsa. Suggested pairing: a side salad of romaine lettuce, tomato, and other vegetables

    Ingredients:

    • Vegetable oil, ½ tbsp
    • Beef tenderloin roast, 16 oz

    For salsa:

    • Canned diced pineapple in fruit juice, chopped into small pieces, ½ cup
    • Minced red onion, ¼ cup
    • Fresh cilantro rinsed, dried and chopped, 2 tsp
    • Lemon juice, 1 tbsp

    For seasoning:

    • Ground black pepper, 1 tsp
    • Ground coriander, 1 tsp
    • Ground cinnamon, 1 tbsp
    • Ground allspice, ¼ tsp
    • Cocoa powder (unsweetened), 1 tbsp
    • Chili powder, 2 tsp
    • Salt, ¼ tsp

    Directions

    1. Preheat oven to 375
    2. For the salsa, combine all ingredients and toss well. Let sit for 10–15 minutes to marinate while preparing the seasoning and cooking the meat.
    3. For the beef tenderloin seasoning, combine all ingredients. Lightly oil the tenderloin and spread an even layer of the dry seasoning over the entire roast.
    4. Place the seasoned roast on a roasting or broiling pan and roast for 10–15 minutes (to a minimum internal temperature of 145 F). Let cool for 5 minutes before carving into 16 slices (1 ounce each).
    5. Serve four slices of the tenderloin with 1⁄4 cup salsa on the side.

    Serves 12

    1 Lemon
    5 cloves Garlic
    4 cups beef broth
    1 cup coconut aminos
    1 tablespoon liquid smoke
    5 pounds beef brisket

    Instructions

    1. Combine all of the ingredients, except the brisket, in a bowl. Mix well.

    2. Place the brisket in a large roasting pan, fat side up. Cover with the marinade. Cover the roasting pan tightly with foil. Marinate in the fridge for 24–48 hours. Let those juices do their flavorful magic!

    3. Roast at 300 ̊F for 4 hours, or 40 minutes per pound. Remove the foil after 4 hours, place under the high broil for a few minutes to lightly char the top. Transfer to a cutting board and slice. Put the slices back in the juices. Serve hot. Enjoy!
